Pretend this is backdated to 10/5/10 :)

Had my first experience with bottling peaches on 10/5.  Jason said it was so monumental we needed to document it. Accordingly he took several pictures (a few of which I will post) and did a great job documenting. The experience was interesting, and probably took a lot longer than usual because it was my first time... and also because Jason was "documenting," thus I was working completely independently.  The peaches turned out well though, and I am convinced that next time will be even better.
Blanching (boiling) peaches for 30-60 seconds to make skins peel off easily.

After placing in ice water for a few minutes (to stop them from cooking), peeling the peaches.

Finished Product!!!!  Funny side note:  I will say that no one told me I had to pack the peaches in TIGHTLY.  I figured this out after my first batch was completed.  Accordingly, the next batch I packed them in much tighter.  When they aren't packed tightly, then the peaches pack themselves while cooking.  Meaning, I pulled out the bottles that were full of peaches before and after they were only half full because they were now packed tightly and the rest of the bottle was filled with juice. LoL. Woops.  Accordingly, Those first bottles didn't make the cut to be on the 1st row for the "Finished Product" pic :)
